Elcie's Granola

Mix together in a large bowl:

8 cups of whole rolled oats

1 1/2 cups of a combination of sliced almonds, cashew pieces or chopped pecans

1 cup of shredded coconut

1/2 cup of sunflower seeds

1/2 cup of pumpkin seeds

 

In a small bowl, stir together:

1/2 cup of coconut oil

1/2 cup of honey

1 T. of cinnamon

 

Pour this into oat mixture and stir thoroughly until evenly distributed. Pour oat mixture into a greased deep baking pan and bake at 300 degrees stirring every 15 minutes until it is browned. You may need to do this in two batches in a small oven like ours.

 

Once cooled stir in:

1 cup of dried fruit – blueberries, raisins or cranberries or a combination of all three.

 

Store in an airtight container and enjoy with yogurt and fruit!
